Kale is one of the chicest greens on the food scene right now. Not only is it incredibly delicious cooked or raw, but it is one of the most nutritious things you can add to your daily diet.
In regards to eye health, kale is full of lutein and zeaxanthin. These compounds are extremely beneficial to help your eyes stay healthy in the battle to prevent cataracts. When your eyes have enough lutein and zeaxanthin, these compounds act similarly to sunglass lenses and help prevent your eyes from ocular damage or cataracts. With the addition of these compounds to your diet you can expect an incredible decrease in likelihood of the occurrence of cataracts in your eyes by 22 percent.
This time of year I believe that kale chips are the way to go! Nowadays you can find kale at most grocery stores. The only preparation I believe is necessary for the kale is cutting it into smaller strips. It can be quite hearty and chewy in large chunks. Here is how to make he delicious Kale crunch crisps
Half a bunch of kale
Drizzle of olive oil
Pinch of salt
preheat the oven to 350°F. Wash, then dry the kale in either a salad spinner or on a clean tea towel.
Tear the kale leaves into bite-sized pieces, discarding the tough central part.
Drizzle with a little olive oil and, working with your hands, rub the leaves gently so all of the kale has a light coating of oil.
Place on a baking sheet in one layer. Sprinkle a pinch of salt over the kale.
Ask an adult to put the baking sheet in the oven. Allow to bake for 20 minutes. Watch the kale to make sure it does not burn.
remove the baking sheet from the oven when the leaves are crispy. Enjoy!
